Prepare the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the chopped spinach and cook for 2-3 minutes until wilted. In a bowl, combine the cooked lobster, shrimp, sautéed spinach, ricotta cheese, grated Parmesan, salt, and black pepper. Mix well and set aside.

Make the Vodka Sauce
In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Add the crushed tomatoes and vodka. Simmer for 10 minutes. Reduce heat and stir in the heavy cream, salt, black pepper, and chopped basil. Cook for another 5 minutes until the sauce thickens slightly.

Stuff the Manicotti
Cook the manicotti pasta according to package instructions until al dente. Drain and cool slightly. Preheat your oven to 180°C (350°F). Using a piping bag or a spoon, fill each manicotti shell with the seafood and ricotta mixture. Place the stuffed manicotti in a baking dish.

Bake the Dish
Pour the prepared vodka sauce over the stuffed manicotti, ensuring they are well covered. Sprinkle shredded mozzarella and additional grated Parmesan on top. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
