Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add salt to the water.

    Cook Penne

    Add the penne pasta to the boiling water and cook according to package instructions for al dente, usually about 10-12 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Making the Vodka Sauce

    Sauté Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

    Add Red Pepper Flakes

    Stir in crushed red pepper flakes and cook for an additional minute.

    Add Tomato Puree and Vodka

    Pour in the tomato puree and vodka, stirring to combine. Bring the mixture to a simmer and cook for about 10 minutes, allowing the alcohol to cook off.

    Incorporate Heavy Cream

    Reduce heat to low and stir in heavy cream. Allow the sauce to simmer for another 5 minutes, stirring occasionally.

    Add Cheese and Basil

    Add the grated Parmesan cheese and chopped basil to the sauce, stirring until the cheese has melted and the sauce is creamy.

    Season the Sauce

    Season the sauce with salt and black pepper to taste.

Combining Pasta and Sauce

    Combine

    Add the cooked penne pasta to the skillet with the vodka sauce, tossing to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

    Serve

    Serve hot, garnished with additional Parmesan and fresh basil if desired.
