Cook the Penne Pasta
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt and then add 2 cups of penne pasta. Cook according to package instructions, usually about 10-12 minutes until al dente. Drain and set aside.
Meatballs

Prepare the Meatballs
In a large bowl, combine 1 lb ground beef, 1 cup breadcrumbs, 0.5 cup grated Parmesan cheese, 2 minced garlic cloves, 1 beaten egg, 1 tsp dried oregano, 0.5 tsp salt, and 0.5 tsp black pepper. Mix until well combined.

Shape and Cook the Meatballs
Preheat the oven to 400°F (200°C). Form the mixture into 6 equal meatballs. In a large skillet, heat 2 tbsp olive oil over medium heat. Brown the meatballs on all sides, about 5-7 minutes. Transfer them to a baking dish and bake in preheated oven for 15-20 minutes until cooked through.

Heat the Sauce
In a saucepan over medium heat, add 2 cups of your choice of creamy vodka sauce or Mama's marinara. Heat until warmed through, about 5 minutes.

Prepare the Salad
In a large bowl, combine 4 cups mixed greens, 1 cup halved cherry tomatoes, 1 sliced cucumber, and 0.5 cup thinly sliced red onion. In a small bowl, whisk together 2 tbsp olive oil, 1 tbsp balsamic vinegar, salt, and black pepper to taste. Drizzle over the salad and toss gently to combine.
Garlic Stick Pie

Prepare the Garlic Stick Pie
Roll out 1 lb of pizza dough into a rectangular shape. Brush with 3 tbsp melted butter and sprinkle with 1 tsp garlic powder and 0.5 cup grated Parmesan cheese. Fold the dough over to create a stuffed pie and seal the edges. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until golden brown.
