Method

Fish

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and beer until smooth. Let it rest for about 15 minutes.

  2. 2

    Heat the Oil

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

  3. 3

    Batter the Cod

Dip each cod fillet into the batter, ensuring it is fully coated.

  4. 4

    Fry the Fish

Carefully place the battered cod into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Fries

  1. 5

    Prepare the Potatoes

Peel the potatoes and cut them into strips, about 1/4 inch thick.

  2. 6

    Soak the Fries

Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

  3. 7

    Fry the Potatoes

Drain and dry the potatoes thoroughly. In a separate pot or fryer, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 4-5 minutes until golden and crispy. Remove and drain on paper towels, sprinkling immediately with salt.

Coleslaw

  1. 8

    Mix the Vegetables

In a large bowl, combine the shredded cabbage and carrot.

  2. 9

    Prepare the Dressing

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

  3. 10

    Combine and Chill

Pour the dressing over the cabbage mixture and toss to coat. Refrigerate for at least 30 minutes to allow flavors to meld.
