Method

Preparation

  1. 1

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or debris. Soak them in a bowl of salted water for about 30 minutes to help purge any remaining sand.

  2. 2

    Cook the Linguini

Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving some pasta water.

Making the Sauce

  1. 3

    Sauté Aromatics

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

  2. 4

    Add Clams

Add the cleaned clams to the skillet and stir to coat them in the oil and garlic.

  3. 5

    Choose Your Sauce Base

For white sauce: Pour in the white wine and let it simmer for about 5 minutes until the clams begin to open. For red sauce: Add the crushed tomatoes and let simmer for about 10 minutes.

  4. 6

    Season the Sauce

Add the chopped parsley, salt, black pepper, and lemon juice to the sauce. Stir well and cook for another 2 minutes.

Combine and Serve

  1. 7

    Mix Pasta and Sauce

Add the cooked linguini to the skillet with the clam sauce. Toss to combine, adding a little reserved pasta water if needed to loosen the sauce.

  2. 8

    Serve

Serve immediately, garnished with extra parsley if desired.
