Eggplant Rollatini

Prepare the Eggplant
Slice the eggplant lengthwise into thin slices. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Rinse and pat dry.

Make the Filling
In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, chopped basil, egg, salt, and pepper. Mix well.

Fill the Eggplant
Preheat the oven to 375°F (190°C). Spread some marinara sauce on the bottom of a baking dish. Take a slice of eggplant, place a spoonful of filling on one end, and roll it up. Place seam side down in the dish.

Bake
Cover the rolls with remaining marinara sauce and sprinkle with more mozzarella cheese. Bake for 25-30 minutes until bubbly and golden.
Fried Calamari

Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels.

Mix the Coating
In a bowl, combine flour, cornstarch, salt, and black pepper.

Coat the Calamari
Dredge the calamari rings in the flour mixture until thoroughly coated.

Fry the Calamari
Heat oil in a deep pan over medium-high heat. Fry the calamari in batches until golden brown, about 2-3 minutes. Drain on paper towels.

Serve hot with lemon wedges on the side.
Broiled Shrimp

Broil the Shrimp
Preheat the broiler. Place the shrimp on a baking sheet in a single layer. Broil for 2-3 minutes on each side until opaque and slightly charred.

Remove from the oven and serve immediately.
Seared Scallops

Pat the scallops dry with paper towels and season with salt and black pepper.

Add minced garlic during the last minute of cooking and sauté until fragrant.

Transfer to a serving platter and enjoy.
Clams Casino

Prepare the Clams
Preheat the oven to 400°F (200°C). Scrub the clams under cold water and open them slightly.

In a bowl, combine breadcrumbs, Parmesan cheese, crumbled bacon, minced garlic, parsley, and melted butter. Mix well.

Stuff the Clams
Place the clams on a baking sheet and spoon the filling onto each clam. Drizzle with a bit more melted butter.

Bake for 10-12 minutes until the topping is golden and the clams are cooked through.
