Chicken Preparation

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Chicken
Rinse the chicken under cold water and pat it dry with paper towels. Place it in a roasting pan.

Season the Chicken
In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the chicken, making sure to get under the skin for maximum flavor.

Roasting the Chicken
Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its own juices halfway through the cooking time.

Rest the Chicken
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Make the Gravy
In a skillet over medium heat, melt the unsalted butter. Once melted, whisk in the flour until smooth and cook for about 1 minute.

Gradually whisk in the chicken broth, stirring constantly to avoid lumps. Bring to a simmer and cook for 3-5 minutes until thickened.

Taste the gravy and adjust seasoning with salt and pepper as needed. Keep warm until ready to serve.
