Method

Prep Seafood

  1. 1

    Prepare the Shellfish

Rinse the sea scallops, shrimp, New Zealand baby clams, and calamari under cold water. Pat them dry with paper towels.

Cook Pasta

  1. 2

    Cook the Pappardelle Pasta

In a large pot of boiling salted water, cook the fresh pappardelle pasta according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.

Make Sauce

  1. 3

    Sauté Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 4

    Add Wine and Broth

Pour in the white wine and vegetable broth. Bring to a simmer, allowing the alcohol to cook off for about 2-3 minutes.

  3. 5

    Cook Seafood

Add the sea scallops, shrimp, clams, and calamari to the skillet. Season with salt and black pepper. Cook for about 5-7 minutes, or until the seafood is cooked through and the clams have opened.

  4. 6

    Finish the Sauce

Stir in the lemon juice and chopped parsley into the sauce, mixing well.

Combine and Serve

  1. 7

    Combine Pasta and Sauce

Add the cooked pappardelle pasta to the skillet with the seafood and sauce. Toss gently to combine and coat the pasta with the sauce.

  2. 8

    Serve

Plate the frutti di mare and garnish with additional parsley, if desired. Serve hot.
