Ravioli Dough Preparation

Make the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Using a fork, gradually incorporate the flour into the eggs until a rough dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Prepare the Cheese Filling
In a mixing bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, egg yolk, nutmeg, salt, and black pepper. Mix until smooth and well blended.

Roll Out the Dough
On a floured surface, divide the dough into quarters. Roll out one quarter into a thin sheet, about 1/16 inch thick. Repeat with the remaining quarters.

Shape the Ravioli
Place small mounds of cheese filling (about 1 tablespoon each) on one sheet of dough, spacing them about 2 inches apart. Moisten the edges with water, then fold the dough over to create a pocket. Press down to seal and cut out individual ravioli using a pasta cutter or knife.

Boil the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Prepare the Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, salt, and black pepper. Simmer for about 15 minutes. For vodka sauce, add vodka and heavy cream, and simmer for an additional 5 minutes.

Finish the Sauce
Stir in fresh basil before serving.
