    Prepare the Swiss Chard

    Wash the Swiss chard thoroughly, chop it into small pieces, and set aside.

    Caramelize the Onion

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until the onions are soft and golden brown, about 15-20 minutes.

    Prepare the Pickles

    Chop the house pickles into small pieces and set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper until combined.

    Cook the Swiss Chard

    In the same skillet used for the onions, add the chopped Swiss chard and another tablespoon of olive oil. Sauté until the chard is wilted, about 2-3 minutes.

    Combine Ingredients

    Add the caramelized onion and chopped pickles to the wilted Swiss chard. Mix well to combine all the flavors.

    Cook the Omelette

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook on medium-low heat until the eggs are set on the edges, about 3-4 minutes. Gently lift the edges with a spatula to allow uncooked egg to flow underneath.

    Once the eggs are mostly set, carefully fold the omelette in half. Cook for an additional 1-2 minutes until fully cooked through. Slide the omelette onto a plate and serve.
