Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Wet Ingredients
In a separate bowl, whisk together the milk, egg, melted unsalted butter (cooled slightly), and vanilla extract until smooth.
Cooking the Pancakes

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.

For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
