Prepare the Egg Mixture
In a medium bowl, whisk together 2 large eggs, 1 cup of milk, 1 tsp of vanilla extract, 1 tsp of cinnamon, and a pinch of salt until well combined.

Place a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

Take each slice of brioche bread and dip it into the egg mixture, allowing it to soak for a few seconds on each side.

Place the soaked brioche slices on the heated skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
