Preheat the oven
Preheat your oven to 200°C (400°F).

Prepare Brussels sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut the larger sprouts in half to ensure even cooking.

Toss Brussels sprouts
In a large bowl, toss the prepared Brussels sprouts with olive oil, salt, and black pepper until they are well coated.

Roast
Spread the Brussels sprouts out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Make balsamic glaze
In a small saucepan over medium heat, combine balsamic vinegar and honey. Bring to a simmer and cook for about 5-7 minutes, or until the mixture has thickened slightly. Remove from heat.

Prepare hazelnuts
While the Brussels sprouts are roasting, toast the hazelnuts in a dry skillet over medium heat for about 5 minutes or until they are fragrant. Let them cool before roughly chopping.

Assemble
Once the Brussels sprouts are done roasting, remove them from the oven and drizzle with the balsamic glaze. Sprinkle the crumbled feta cheese and chopped hazelnuts over the top.
