    Prepare the Jalapeno Cornbread

    In a mixing bowl, combine cornmeal, flour, baking powder, sugar, diced jalapenos, milk, eggs, and melted butter. Pour the batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes until golden brown. Let it cool before slicing into pieces.

    Assemble the Sandwich

    Layer the smoked pit beef and pulled pork on one piece of jalapeno cornbread. Top with shredded cheddar cheese, a generous scoop of picnic slaw, and drizzle with house-made BBQ sauce. Place another piece of cornbread on top to complete the sandwich.

    Grill the Sandwich

    Preheat a grill or skillet over medium heat. Grill the assembled sandwich for 2-3 minutes on each side until the cornbread is toasted and the cheese is melted. Remove from heat and let cool slightly.

    Cut the sandwich in half and serve warm with additional BBQ sauce on the side.
