Prepare the Chicken
Preheat your grill or skillet over medium-high heat. Rub the chicken breasts with olive oil, and season both sides with blackening seasoning, salt, and black pepper.

Cook the Chicken
Place the seasoned chicken breasts on the grill or skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Add Cheese
In the last minute of cooking, place a slice of pepperjack cheese on each chicken breast, cover, and let it melt.

Prepare the Avocado
While the chicken is cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces.

Assemble the Sandwich
Toast the brioche buns if desired. Spread chipotle aioli on the bottom half of each bun, layer with the blackened chicken, avocado slices, and crispy onions. Top with the other half of the bun.

Serve immediately with your favorite side, such as fries or a salad.
