Sauté the Vegetables
In a large crock pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic and Broth
Stir in the minced garlic and sauté for an additional minute. Pour in the vegetable broth and bring to a simmer.

Incorporate Remaining Ingredients
Add the canned diced tomatoes (with juice), chopped green beans, frozen corn, dried thyme, salt, black pepper, and the bay leaf. Stir well to combine.

Cook the Soup
Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until all vegetables are tender.

Serve and Garnish
Remove the bay leaf before serving. Ladle the soup into bowls and garnish with chopped fresh parsley.
