Prepare the Potatoes
Peel the Russet potatoes and cut them into even-sized strips, about 1/4 to 1/2 inch thick.

Soak the Potatoes
Rinse the potato strips in cold water to remove excess starch and soak them in cold water for at least 30 minutes. This helps achieve a crispier fry.

Dry the Potatoes
Drain and pat the potato strips dry with a clean kitchen towel.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a batch of potato strips to the hot oil. Fry them for about 4-5 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

Drain and Season
Remove the fries from the oil with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, black pepper, and garlic powder to taste.
