Method

Cooking Directions

  1. 1

    Prepare the Slaw

In a large bowl, combine shredded cabbage and grated carrots. In a separate bowl, mix mayonnaise, lemon juice, salt, and paprika. Pour the dressing over the cabbage and carrots, mix well, and set aside.

  2. 2

    Make the Batter

In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add beer to create a smooth batter.

  3. 3

    Prepare the Potatoes

Peel and cut the potatoes into thick fries. Rinse under cold water and pat dry with a towel.

  4. 4

    Fry the Potatoes

In a deep pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt to taste.

  5. 5

    Fry the Fish

Dip each cod fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for 4-5 minutes, until golden brown. Remove and drain on paper towels.

  6. 6

    Assemble and Serve

Serve the crispy fish alongside the fries and picnic slaw. Accompany with tartar sauce and lemon wedges, if desired.
