Coconut Snapper Ingredients

Method

Preparation Directions

  1. 1

    Marinate the Snapper

In a bowl, combine coconut milk, chopped cilantro, lime juice, minced garlic, salt, and black pepper. Add the snapper fillets and marinate for at least 30 minutes.

  2. 2

    Prepare Coconut Rice

Cook the rice according to package instructions, replacing half of the water with coconut milk for a creamy flavor.

  3. 3

    Make Coconut Black Beans

In a saucepan, heat olive oil over medium heat. Add drained black beans and cook until warmed through. Season with salt and pepper.

  4. 4

    Prepare Slaw

In a bowl, combine shredded napa cabbage and sliced bell pepper. Dress with lime juice, olive oil, salt, and pepper to taste.

  5. 5

    Cook the Snapper

Preheat a grill or skillet over medium-high heat. Cook marinated snapper fillets for about 4-5 minutes on each side or until cooked through.

  6. 6

    Serve

Plate the snapper with coconut rice, coconut black beans, and napa cabbage-bell pepper slaw on the side.
