Chicken Liver Mousse

    Prepare the Chicken Livers

    Clean the chicken livers by removing any connective tissue and veins. Rinse under cold water and pat dry.

    Sauté Aromatics

    In a skillet, melt 50g of butter over medium heat. Add chopped shallots and garlic, sauté until translucent.

    Cook the Chicken Livers

    Add the chicken livers to the skillet, cook until browned and cooked through, about 5-7 minutes. Add cognac, cook for another 2 minutes.

    Blend the Mixture

    Transfer the liver mixture to a food processor. Add remaining butter, heavy cream, salt, and pepper. Blend until smooth.

    Chill the Paté

    Transfer the mousse to a serving dish, cover, and refrigerate for at least 2 hours or until set.

    Wrap with Prosciutto

    Once set, wrap the mousse with prosciutto slices for serving.

Apple Onion Jam

    Cook the Jam

    In a saucepan, combine apples, onion, brown sugar, apple cider vinegar, and salt. Cook over medium heat until apples are soft and mixture is thickened, about 20 minutes.

Pear Mustard

    Mix the Pear Mustard

    In a bowl, combine diced pear, yellow mustard, and honey. Mix until well combined.

Serving

    Serve

    Serve the chicken paté with apple onion jam, pear mustard, and an assortment of bread and crackers.
