Preparation Steps

  1. 1

    Prepare the Pork

Preheat your oven to 300°F (150°C). Rub the pork shoulder with salt and place it in a roasting pan. Cover with foil and roast for about 4 hours until tender.

  2. 2

    Shred the Pork

Remove the pork from the oven and let it cool slightly. Shred the meat with two forks and mix it with BBQ sauce.

  3. 3

    Make the Slaw

In a large bowl, combine shredded napa cabbage, diced bell pepper, lime juice, chopped cilantro, and salt. Toss until well mixed.

  4. 4

    Warm the Tortillas

In a skillet, heat corn tortillas one at a time over medium heat for about 30 seconds on each side until warm.

  5. 5

    Assemble the Tacos

Fill each tortilla with BBQ pork and top with napa cabbage-bell pepper slaw.
