Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Meat
In a bowl, mix together smoked paprika, salt, black pepper, and cumin. Rub this spice mixture all over the pork chunks.

Sauté Aromatics
In a large skillet, heat a little oil over medium heat. Add chopped onion and minced garlic, cooking until softened and fragrant.

Slow Cook the Pork
Transfer the sautéed onion and garlic to a slow cooker. Add the seasoned pork pieces, apple cider vinegar, barbecue sauce, and water. Stir to combine. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the juices.

Serve the pulled pork hot, with additional barbecue sauce on the side if desired.
