Cooking Instructions

  1. 1

    Prepare the Brisket

Start by trimming excess fat from the brisket. You want to leave about 1/4 inch of fat for moisture and flavor.

  2. 2

    Season the Brisket

In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the brisket evenly.

  3. 3

    Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and cook for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

  4. 4

    Rest the Brisket

Once the brisket is done, remove it from the smoker and let it rest for at least 30 minutes before cutting.

  5. 5

    Cut into Burnt Ends

Cut the brisket into 1-inch cubes. Place the cubes into a pan.

  6. 6

    Add Sauces

In a separate bowl, mix the BBQ sauce, Worcestershire sauce, apple cider vinegar, and brown sugar. Pour this mixture over the brisket cubes.

  7. 7

    Finish Cooking

Return the pan with the burnt ends to the smoker, and cook for an additional 1-2 hours at 250°F (121°C), until they are caramelized and tender.

  8. 8

    Serve

Remove the burnt ends from the smoker, let them cool for a few minutes, then serve warm with additional BBQ sauce on the side.
