    Prepare the Brisket

    Rub the beef brisket with a mixture of smoked paprika, brown sugar, garlic powder, onion powder, black pepper, and salt. Let it sit for at least 1 hour or overnight in the refrigerator for enhanced flavor.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

    Cut into Burnt Ends

    Remove the brisket from the smoker and let it rest for 30 minutes. Cut the brisket into 1-inch cubes, and return the cubes to the smoker for an additional 1-2 hours.

    Glaze with BBQ Sauce

    During the last 30 minutes of smoking, toss the burnt ends in BBQ sauce to glaze them.

    Assemble the Sandwich

    Place the burnt ends on the brioche bun, top with pickles, and serve with your choice of side.
