Prepare the Patties

In a mixing bowl, combine the ground beef with salt and black pepper. Divide the mixture into two equal portions and shape them into burger patties.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.

Add Pastrami and Cheese

During the last minute of cooking, place a slice of pastrami and a slice of Swiss cheese on each patty. Cover with a lid to melt the cheese.

Toast the Buns

While the cheese is melting, lightly toast the burger buns on the grill or in a toaster until golden brown.

Assemble the Burger

Spread 2 tablespoons of 1000 Island dressing on the bottom half of each bun. Place the cooked patty with melted cheese and pastrami on top, followed by a generous scoop of sauerkraut. Top with the other half of the bun.

Serve immediately with your favorite sides.
