Preparation

Veggie Balls

1. Prepare the Veggie Balls

In a food processor, combine chickpeas, parsley, onion, garlic, cumin, coriander, salt, and black pepper. Pulse until a coarse mixture forms. Transfer to a bowl and stir in flour until combined. Form into small balls.

2. Fry the Veggie Balls

Heat olive oil in a pan over medium heat. Fry the veggie balls until golden brown on all sides. Remove and drain on paper towels.

Harissa Hummus

3. Blend the Hummus

In a blender or food processor, combine cooked chickpeas, tahini, harissa paste, lemon juice, garlic, olive oil, salt, and water. Blend until smooth.

Chermoula

4. Mix the Chermoula

In a bowl, mix parsley, cilantro, garlic, cumin, paprika, lemon juice, olive oil, and salt until well combined.

Platter Assembly

5. Assemble the Mezze Platter

On a large serving platter, arrange veggie balls, harissa hummus, chermoula, feta, olives, dates, seared salami, pita crisps, and assorted fresh veggies.
