Prepare the Dough

In a small bowl, combine warm water, honey, and yeast. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt. Add the yeast mixture, milk, melted butter, and egg. Mix until a dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Rolls

Punch down the dough and divide it into small equal pieces (about 12-15). Shape each piece into a ball and place them in a greased cast-iron skillet, leaving a little space between each roll. Cover and let rise for another 30 minutes.

Bake the Rolls

Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown. Remove from oven and brush with melted butter.

Prepare Chive Butter

In a small bowl, mix softened butter with chopped chives until well combined. Serve the rolls warm with chive butter.
