Prepare the Branzino
Preheat your oven to 375°F (190°C). Season the Branzino fillets with salt, black pepper, and minced garlic. Drizzle with 2 tablespoons of olive oil and place them on a baking sheet lined with parchment paper.
Bake the Fish
Bake the Branzino in the preheated oven for about 15-20 minutes until the fish is cooked through and flakes easily with a fork.
Prepare the Sun-Dried Tomato Emulsion
In a small bowl, combine the sun-dried tomatoes, remaining olive oil, lemon juice, and a pinch of salt. Blend until combined to create a smooth emulsion.
Assemble the Plate
On a serving plate, spread the warm hummus as a base. Layer the cooked grains on top, followed by the mixed greens. Place the baked Branzino fillets on top and drizzle with the sun-dried tomato emulsion. Finish with crumbled feta and sliced olives.
Serve
Serve immediately while warm, garnished with additional lemon juice or herbs if desired.
