Prepare the Frites

1. Wash and peel the Russet potatoes. Cut them into thin strips to form frites. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes

2. After soaking, drain and pat the potato strips dry with paper towels to ensure they are as dry as possible.

Heat the Oil

3. In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

4. Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.

5. While the frites are still hot, season with salt and black pepper to taste.

6. For the remoulade, slice the yellow onion and char it in a skillet over medium-high heat until softened and browned, about 5-7 minutes.
