Prepare the Pork Chops

Season the pork chops with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 3-4 minutes on each side until browned. Remove from skillet and set aside.

Roast the Peaches and Cabbage

Preheat the oven to 400°F (200°C). Cut the peaches in half and remove the pits. Cut the cabbage into wedges. Place the peaches and cabbage on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until tender and caramelized.

Make the Vidalia Soubise

In the same skillet used for the pork chops, add diced Vidalia onion and cook until translucent. Add heavy cream and simmer until thickened. Blend until smooth and set aside.

Prepare the Hot Honey Glaze

In a small saucepan, combine honey, cider vinegar, and mustard. Heat over low until warmed through.

Candied Peanuts

In a small saucepan, add peanuts and a bit of honey. Cook over medium heat, stirring frequently until the peanuts are toasted and caramelized. Remove from heat and let cool.

Combine and Serve

Place the pork chops on a plate, drizzle with hot honey glaze, and serve alongside roasted peaches and cabbage. Spoon over the Vidalia soubise and top with candied peanuts.
