Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Apply Olive Oil
In a large bowl, toss the chicken wings with olive oil to coat them evenly.

Choose Your Seasoning
Select your preferred dry rub seasoning (Lemon Pepper, Cajun, Curry, or Jamaican Jerk) and sprinkle it over the wings.

Rub the Seasoning
Massage the seasoning into the wings until they are well coated.
Smoking the Wings

Preheat the Smoker
Preheat your smoker to 250°F (121°C).

Smoke the Wings
Place the seasoned wings onto the smoker rack. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Crisp the Skin (Optional)
For extra crispy skin, increase the smoker temperature to 400°F (204°C) for the last 10-15 minutes of cooking.
