Prepare the Pork
Rub the pork shoulder with salt and black pepper. Place it in a smoker or slow cooker with applewood chips and cook until tender (about 8 hours at 225°F if smoking, or 8-10 hours on low in a slow cooker).

Make the Coleslaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, and salt. Mix well and refrigerate until serving.

Shred the Pork
Once the pork is cooked, remove it from the cooker and let it rest for 15 minutes. Then, shred the pork using two forks.

Combine and Serve
Mix the shredded pork with Carolina BBQ sauce. Serve the pulled pork on dinner rolls topped with coleslaw. Add pickles if desired.
