    Prepare the Fries

    Wash and cut the Russet potatoes into fries. Rinse in cold water and pat dry.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

    Make the Chili

    In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat. Add chopped onion and minced garlic, and sauté until onions are translucent.

    Combine Chili Ingredients

    Stir in the canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Simmer for about 20 minutes, stirring occasionally.

    Assemble the Chili Fries

    Place a generous portion of fries on a plate, top with the chili, and sprinkle the shredded cheese blend over the top. Serve immediately.
