Tortilla Chips

    Prepare the Tortillas

    Cut each corn tortilla into 6 wedges using a sharp knife or pizza cutter.

    Heat the Oil

    In a large skillet or deep frying pan, heat vegetable oil over medium-high heat until hot but not smoking.

    Fry the Chips

    Carefully add tortilla wedges to the hot oil in batches, frying them for about 2-3 minutes or until they are golden brown and crispy.

    Drain and Season

    Remove the chips from the oil using a slotted spoon and place them on a paper towel-lined plate. Sprinkle with salt while still hot.

Salsa

    Prepare the Vegetables

    Dice the ripe tomatoes, chop the red onion, and finely chop the jalapeño pepper (remove seeds for less heat).

    Mix Ingredients

    In a mixing bowl, combine the diced tomatoes, chopped onion, chopped jalapeño, and chopped cilantro.

    Season the Salsa

    Add lime juice and salt to the vegetable mixture. Stir gently to combine all ingredients.

    Chill and Serve

    Let the salsa sit for at least 15 minutes to allow the flavors to meld before serving with the tortilla chips.
