Preparation of Filling

    Cook the Rice

    In a medium pot, rinse the long-grain rice under cold water until the water runs clear. Add 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it cool.

    Sauté the Onion

    In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the finely chopped onion and sauté until translucent, about 5 minutes.

    Mix the Filling

    In a large bowl, combine the cooked rice, sautéed onion, chopped parsley, chopped mint, chopped tomato, remaining olive oil, salt, black pepper, and lemon juice. Mix well until all ingredients are evenly combined.

Stuffing the Grape Leaves

    Prepare the Grape Leaves

    Carefully separate the grape leaves from the jar and rinse them under cold water. Pat dry with paper towels.

    Stuff the Leaves

    Place a grape leaf on a flat surface, vein side up. Add about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

Cooking the Stuffed Grape Leaves

    Arrange in Pot

    In a large pot, place the stuffed grape leaves seam side down. Pack them snugly together in layers. Add lemon slices on top.

    Add Cooking Liquid

    Pour the vegetable broth or water over the grape leaves until they are just covered.

    Cook

    Cover the pot with a lid and bring to a gentle simmer over medium heat. Cook for about 45-50 minutes until the grape leaves are tender. Check occasionally to ensure there’s enough liquid; add more broth or water if necessary.
