Marinated Meat

Prepare the Marinade

In a large bowl, combine yogurt, minced garlic, ground cumin, ground coriander, paprika, turmeric, salt, black pepper, olive oil, and lemon juice. Mix well to create a marinade.

Marinate the Meat

Add the boneless chicken thighs or beef sirloin to the marinade. Make sure the meat is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cook the Meat

Preheat a grill or skillet over medium-high heat. Remove the meat from the marinade and allow excess marinade to drip off. Grill or cook the meat for about 6-8 minutes per side for chicken, or 4-6 minutes per side for beef, until cooked through. Let the meat rest before slicing.

Rice

Rinse the Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Cook the Rice

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes or until the water is absorbed and the rice is tender. Fluff with a fork.

Salad

Prepare the Salad

In a large bowl, combine diced cucumber, diced tomato, thinly sliced red onion, and chopped parsley. Drizzle with olive oil and lemon juice, and season with salt and black pepper to taste. Toss gently to combine.

Pita

Warm the Pita

If desired, warm the pita bread in a dry skillet over medium heat for 1-2 minutes on each side, or wrap in foil and heat in the oven at 350°F (175°C) for about 5-7 minutes.
