Method
Marinating the Meat
- 1
Prepare the Marinade
In a large bowl, combine minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, ground black pepper, salt, olive oil, lemon juice, and yogurt.
- 2
Marinate the Meat
Add the thinly sliced beef or chicken to the marinade, mixing well to ensure all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best flavor.
Cooking the Meat
- 3
Cook the Meat
If using a vertical rotisserie, thread the marinated meat onto the skewer and cook according to the manufacturer's instructions until fully cooked and slightly charred. Alternatively, you can grill the meat on a barbecue or in a grill pan over medium-high heat for about 10-15 minutes, turning occasionally.
Preparing the Rice
- 4
Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
