Marinating the Lamb

    Prepare the Marinade

    In a mixing bowl, combine olive oil, minced garlic, lemon juice, ground cumin, ground coriander, salt, black pepper, and dried oregano. Whisk until well blended.

    Marinate the Lamb

    Add the cubed lamb to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for best flavor.

Cooking the Lamb

    Cook the Lamb

    Preheat a grill or skillet over medium-high heat. Remove the lamb from the marinade and thread onto skewers or place directly in the skillet. Cook for 10-15 minutes, turning occasionally, until the lamb is browned and cooked through.

    Rest the Lamb

    Remove the lamb from the heat and let it rest for 5 minutes before slicing into smaller pieces.

Assembling the Gyros

    Prepare the Pita

    Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.

    Assemble the Gyro

    Layer the sliced lamb, red onions, diced tomatoes, and tzatziki sauce on the warm pita bread. Fold the pita in half to enclose the filling.

    Serve

    Serve immediately while warm, with extra tzatziki sauce on the side if desired.
