Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper. Whisk together until well blended.

    Marinate the Meat

    Add the cubed chicken breast to the marinade. Stir to ensure all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Skewer Preparation

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

    Assemble the Kebabs

    Thread the marinated chicken, bell peppers, red onion, and zucchini onto the skewers, alternating between the ingredients.

Cooking the Kebabs

    Grill the Kebabs

    Place the assembled skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Cooking the Rice

    Cook the Rice

    In a medium saucepan, bring water to a boil. Add the long-grain rice, butter, and salt. Stir once and reduce the heat to low. Cover and simmer for 18-20 minutes or until the rice is tender and water is absorbed.

Serving

    Serve the Kebabs

    Remove the kebabs from the grill and let them rest for a few minutes. Serve hot alongside the cooked rice.
