Prepare the Marinade
In a large mixing bowl, combine olive oil, minced garlic, ground cumin, ground paprika, ground coriander, salt, black pepper, and lemon juice. Mix well until all ingredients are fully combined.

Marinate the Beef
Cut the beef sirloin into 1-inch cubes and add it to the marinade. Toss until all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Prepare the Vegetables
While the beef is marinating, chop the bell pepper and red onion into chunks, similar in size to the beef cubes.

Soak Skewers
If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

Assemble the Kebabs
Once the beef is marinated, thread the beef cubes, bell pepper chunks, and red onion chunks onto the skewers, alternating between beef and vegetables.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F / 200°C).

Grill the Kebabs
Place the assembled kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness (medium-rare is about 135°F / 57°C).

Serve
Remove the kebabs from the grill and let them rest for a few minutes before serving. Enjoy your grilled beef kebabs with your favorite dipping sauce or side dish!
