Prepare the Ingredients

Start by cutting the guanciale into small strips. Grate the Parmesan cheese and finely chop the chives. Set aside.

Cook the Spaghetti

In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Cook the Guanciale

In a large skillet over medium heat, add the guanciale and cook until crispy. Remove from heat and set aside.

Mix the Sauce

In a bowl, whisk together the egg yolks, grated Parmesan, black pepper, and a pinch of salt until smooth.

Combine Everything

Add the hot spaghetti to the skillet with the guanciale. Quickly pour in the egg mixture, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve

Plate the spaghetti carbonara, garnish with chopped chives, and additional black pepper if desired. Serve immediately.
