Burger Preparation
Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.
Cook the Wagyu Patties
Form the Wagyu beef into 4 equal patties. Season with salt and pepper. In the same skillet, increase the heat to high and cook the patties for about 2-3 minutes on each side until a crust forms.
Melt the Cheese
During the last minute of cooking the patties, place a slice of smoked gouda on each patty to melt.
Assemble the Burgers
On the bottom half of each brioche bun, layer shredded lettuce, a Wagyu patty with melted gouda, fried oysters, two slices of bacon, pickles, and a generous dollop of James' secret sauce. Top with the other half of the bun.

Prepare the Side Dish
Serve with either Judy's potato salad or smashed potatoes on the side.
