Corned Beef Preparation

Cook the Corned Beef

In a large pot, combine the corned beef brisket, water, pickling spice, and garlic cloves. Bring to a boil, then reduce heat and simmer for about 3 hours or until the meat is tender. Remove the corned beef and let it rest before slicing.

Sandwich Assembly

Assemble the Reuben

Butter one side of each slice of rye bread. On the unbuttered side of four slices, layer with sliced corned beef, sauerkraut, Swiss cheese, and a generous amount of 1000 island dressing. Top with the remaining slices of rye bread, buttered side up.

Grill the Sandwich

In a skillet over medium heat, grill the sandwiches until golden brown on both sides and the cheese has melted, about 4-5 minutes per side.

Prepare the Side

For Judy's potato salad, boil the potatoes until tender, then chop and mix with mayonnaise, mustard, celery, salt, and pepper. For smashed potatoes, boil the potatoes until tender, then mash with milk and butter until creamy.
