Method
For the Prime Top Sirloin
Cook the Steaks
Sear the steaks in the skillet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let them rest.
For the Smashed Homefries
Smash and Season
Preheat the oven to 425°F (220°C). Place the potatoes on a baking sheet and gently smash them with a fork. Drizzle with melted butter, and sprinkle with garlic powder, paprika, salt, and pepper.
Bake the Homefries
Bake in the oven for about 20-25 minutes until crispy and golden. Garnish with chopped chives before serving.
For the Roasted Heirloom Carrots
Prepare the Carrots
Preheat the oven to 400°F (200°C). Peel and trim the heirloom carrots.
Season and Roast
Toss the carrots with olive oil, honey, salt, and black pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender and caramelized.
For the Black Garlic Bordelaise
Make the Bordelaise Sauce
In a saucepan, sauté chopped shallots in butter until translucent. Add red wine and reduce by half. Then add beef stock, black garlic, thyme, salt, and pepper. Simmer until thickened.
Finish the Sauce
Strain the sauce if desired, and adjust seasoning to taste before serving.
