Prepare the Ingredients

Preheat your oven to 400°F (200°C). Trim the ends of the brussel sprouts and cut them in half. Chop the red bell pepper into bite-sized pieces. Mince the garlic and chop the onion.

Toss the Vegetables

In a large bowl, combine the brussel sprouts, red bell peppers, minced garlic, and chopped onion. Drizzle with olive oil, and season with salt and black pepper. Toss well to coat.

Roast the Vegetables

Spread the mixture evenly on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the brussel sprouts are crispy and golden brown, stirring halfway through.

Add Toppings

Once roasted, remove from the oven and sprinkle with grated parmesan cheese and drizzle with balsamic glaze. Toss gently to combine.
