Ice Cream Preparation

    Prepare the Base

    In a medium saucepan, combine heavy cream, whole milk, sugar, and salt. Heat over medium heat until the mixture is steaming but not boiling.

    Whisk the Egg Yolks

    In a separate bowl, whisk together the egg yolks. Slowly pour about half of the warm cream mixture into the yolks while whisking continuously to temper the yolks.

    Combine and Cook

    Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-10 minutes).

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

    Chill the Mixture

    Cover and refrigerate the mixture for at least 4 hours or overnight to chill thoroughly.

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
