    Prepare the Potatoes

    Wash and scrub the Yukon Gold potatoes. In a large pot, cover the potatoes with water, add salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Make the Serrano Sauce

    In a blender, combine serrano peppers, garlic, sour cream, lime juice, and a pinch of salt and pepper. Blend until smooth. Adjust seasoning if needed.

    Smash the Potatoes

    Once the potatoes are cooked, drain them and let them cool slightly. Place each potato on a cutting board and gently press down with a flat object (like a plate) to smash them.

    Fry the Potatoes

    In a large skillet, heat the oil over medium-high heat. Once hot, add the smashed potatoes in batches and fry until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.

    Plate the crispy smashed potatoes, drizzle with the creamy serrano sauce, and top with crumbled queso fresco and fresh cilantro. Serve immediately.
