Slice the ripe avocados in half, remove the pit, and scoop out the flesh. Cut the flesh into thick wedges.

Make the Tempura Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water until the mixture is smooth and slightly thick.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Avocado Wedges
Dip each avocado wedge into the tempura batter, ensuring it is fully coated. Carefully place the coated wedges into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes per side.

Remove the fried avocado from the oil and place them on paper towels to drain excess oil. Serve warm, topped with shredded lettuce, pickled jalapeños, and a drizzle of chipotle crema.
