Preheat your oven to 400°F (200°C). Slice the jalapeños in half lengthwise and remove the seeds for a milder flavor, or leave them for extra heat.

In a bowl, combine the cream cheese, queso fresco, olive oil, salt, and black pepper. Mix until smooth and well combined.

Fill each jalapeño half with the cheese mixture, pressing down gently to ensure they are well packed.

Place the stuffed jalapeños on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and the jalapeños are tender.

While the jalapeños are baking, prepare the spicy ranchero sauce, pico de gallo, and chop the fresh cilantro.
