    Prep the Potatoes

    Wash and slice the russet potatoes thinly using a mandoline or a sharp knife. Rinse the slices in cold water to remove excess starch and pat them dry with a paper towel.

    Make the BBQ Seasoning

    In a bowl, mix together paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the BBQ spice blend.

    Oil the Chips

    In a large bowl, toss the potato slices with olive oil until well coated.

    Season the Chips

    Sprinkle the BBQ seasoning over the oiled potato slices and toss again until evenly coated.

    Bake the Chips

    Preheat your oven to 400°F (200°C). Spread the potato slices in a single layer on baking sheets. Bake for 20-25 minutes or until they are golden brown and crispy, flipping halfway through.
